This simple banana bread mug cake uses super simple ingredients, and the result is oh so delicious. Plus, it’s 100% vegan so you don’t have to worry about breaking eggs in your mug! You likely have all of these ingredients in your pantry:

  • Banana: You only need 1/2 of an extra ripe banana for this banana bread flavor and to sweeten the mug cake.
  • Coconut oil: Add the perfect amount of moisture with a little coconut oil.
  • Brown sugar: You only need a tablespoon of brown sugar for sweetening. Feel free to use coconut sugar instead to keep it free of refined sugars.
  • Flour: We keep it simple with just a little bit of all-purpose flour.
  • Cinammon: Get that cozy, warming taste with ground cinnamon.
  • Baking staples: As with any baking recipe, you’ll also need vanilla extract, baking powder, and salt.
  • Optional: I LOVE putting a few mini chocolate chips in and on top of the cake itself. Make yourself extra chic with chopped walnuts too! If you want to keep the banana cup cake vegan, be sure to use vegan / dairy-free chocolate chips like the linked ones.

Can i make it gluten free?

Yes! Feel free to just use a 1: 1 gluten-free all-purpose flour instead of the regular flour.

Make this banana cup cake in 5 easy steps

That’s right, this mug cake can be assembled in just a few steps and in a total of 5 minutes – including preparation time:

  1. Mix the wet ingredients. First mash the banana in a small bowl, then mix in the coconut oil, brown sugar and vanilla.
  2. Add the dry. Mix the flour, baking powder, cinnamon and salt in the same bowl. Fold in the chocolate chips and walnuts if you use them.
  3. Prepare your mug. Spray a microwaveable cup with nonstick cooking spray, then pour the batter into it. Top with more chocolate chips and walnuts if you like.
  4. Boil it up. Heat the mug cake in the microwave for 1 minute and 30 seconds on the highest setting until the batter is firm.
  5. Cool & enjoy. Let the mug cake cool down and then enjoy it straight out of the mug!

  • Use an extra ripe banana to make the mug cake nice and sweet.
  • Don’t forget the baking powder! Nobody likes a flat cup cake.
  • Mix the ingredients in a bowl first before adding them to your mug so that everything is evenly distributed.
  • Be careful not to overcook the mug cake, otherwise it can become airtight. It is done when the top no longer looks “wet”.

Vegan banana bread cup cake

Delicious vegan banana mug cake that can be made in the microwave in just 5 minutes with super simple ingredients! You’ll LOVE this simple banana bread mug cake for a fun, quick treat when the sweet tooth strikes. Tastes like a piece of banana bread and your favorite piece of cake!

  • 1/2
    extra ripe banana (about 1/4 cup mashed banana)
  • 1
    Coconut oil, melted and cooled
  • 1
    packaged brown sugar (or coconut blossom sugar)
  • 1/2
    Vanilla extract
  • 1/4
    All-purpose flour (or sub 1: 1 gluten-free all-purpose flour)
  • 1/4
    Baking soda
  • 1/8
  • 1/8
  • Optional:
  • 1
    Mini or normal chocolate chips, plus more to spread
  • 1
    chopped walnuts, plus more to sprinkle
  1. Mash the banana half in a small bowl. Add coconut oil, brown sugar and vanilla extract and mix well with a fork or whisk.

  2. Next, stir in the flour, baking powder, cinnamon and salt and mix until everything is well mixed. Fold in chocolate chips and walnuts, if used.

  3. Spray a microwaveable cup with nonstick cooking spray, then pour the batter into the cup.

  4. If you like, sprinkle a few more chocolate chips and chopped walnuts on the dough.

  5. Place the mug in the microwave and turn the microwave on for 1 minute and 30 seconds, or until the batter is no longer wet on top. Be careful not to cook too long or the cake will be tough.

  6. Take the mug out of the microwave and let it cool for a few minutes. Cover with your favorite nut or core butter, let cool and dig in!
