It’s a Starbucks invention. Here’s the thing: the Starbucks version of this shaken espresso just tastes okay. The homemade version? It tastes good great. It’s deliciously nuanced, cozy and just sweet enough, cinnamon to the front with a warm nuance from the brown sugar syrup. You really have to try this!

Ice Chilled Oat Milk Espresso with Brown Sugar is a Starbucks drink that combines shaken espresso, oat milk, and brown sugar syrup. It’s essentially an ice-cold latte, but the espresso is shaken for a frothy texture and has a little less milk. The ice-cold oat milk espresso with brown sugar at Starbucks tastes overwhelmingly like oat milk: It is a flavorful note. When we ordered it, we had great expectations! But you don’t get any of those brown sugar or cinnamon flavors. (In fact, the whole drink just made me thirsty.) Homemade makes an incredible drink: You get dark espresso notes, cozy brown sugar, spicy cinnamon and creamy oat milk in one sip. Here are the basic steps:

  • Step 1: make the brown sugar syrup.
  • Step 2: make a double espresso.
  • Step 3: Put espresso with 1 ½ tbsp syrup and ⅛ teaspoon cinnamon in a glass and shake!
  • Step 4: Add ½ cup of regular oat milk and enjoy.

  • Moka pot: You can also prepare strong espresso-like coffee in a moka pot (bialetti).

How to make brown sugar syrup

The only other thing you have to do for this drink? Make homemade brown sugar syrup! It only takes 5 minutes and makes a 3/4 cup glass that you can use for all of your future beverages. A simple syrup is just that: simple! The basic requirement is that you combine equal parts sugar and water. Here’s what to do for this one:

  • Mix sugar and water: Put ½ cup each of brown sugar and water in a small saucepan on the stove.
  • Heating until dissolution: Heat for 1 to 2 minutes over medium heat and stir until completely dissolved. Don’t let it simmer!

That’s it! You can store it refrigerated for up to 1 month. It is enough to make 8 of these shaken espressos from oat milk with ice cubes! You can also use it for pancakes and waffles.

  • 2 Espresso shots (2 ounces)
  • 1 ½ tablespoon brown sugar syrup (or more to taste)
  • ⅛ teaspoon cinammon
  • ½ cup normal oat milk (unsweetened)
  1. Make the brown sugar syrup: Add ½ cup of brown sugar and ½ cup of water to the saucepan and heat over medium heat. Stir for 1 to 2 minutes until the sugar has dissolved (do not simmer). Keeps for 1 month in the refrigerator (makes ¾ cup).
  2. Prepare espresso: Prepare the espresso with an espresso machine, a manual espresso maker, a French press or a moka pot.
  3. Shake: Combine the espresso, brown sugar syrup and cinnamon in a medium glass and shake until everything is well mixed. Remove the lid, fill the glass with ice and add the oat milk.
