Baked brie is one of the most enjoyable appetizer during the holiday season. Brie stuffed with raspberry preserve, pecans for a crunch factor then wrapped in a puff pastry. So delicious.

Baked brie is a classic party appetizer that can be prepared ahead to save you some time. Stuffing the brie with a generous amount of jam takes this recipe to a new level.

📋 Ingredient Notes

  • I’ve noticed that many of you like recipes with puff pastry so I’ve used it in this recipe. You can also wrap the brie in buttered phyllo dough.
  • For the brie, I’ve used an 8oz wheel but you can use up to 12oz.
  • You can use whatever jam or preserve you like but raspberry is my favorite. More on that in the tips sections below.

  1. Roll out the thawed puff pastry a bit with a rolling pin. Cut Brie in half with a sharp knife, place cheese in the center of the puff pastry and top with jam.
  2. Add chopped pecan on top. 
  3. Top that with the other cheese half.

  1. Fold one corner of the puff pastry over the cheese as shown above.
  2. Now wrap the puff pastry on top of the brie brushing with egg wash after each fold as shown on images 5 and 6.
  3. Place brie in the center of the cookie sheet and bake until golden brown.

💡 Tips

  • To make it easier to cut the brie it is better to freeze it for 20 to 30 minutes to firm up a bit.
  • In my opinion the more preserve the better so do not hold back if this is your thing too. I like using raspberry jam but you can also use fig jam, apricot jam or cranberry jam as well.
  • To keep the brie from leaking you need to brush each fold you make with the pastry dough with egg wash, egg acts as glue for your pastry dough.
  • Lining your baking pan with parchment paper- before putting the brie down helps reduce residue on the pan.
  • I highly advise you to let it cool for a 5-10 minutes before serving it. This gives the melted cheese just a little time to firm up — it will still be gooey and scoop-able, but no longer molten lava burning mouths.
  • Make ahead tip: Prepare this dish then refrigerate for up to one day. Bake right before serving.

Store leftover brie in an airtight container or wrapped tightly in plastic wrap and refrigerate for up to 4 days.

I baked mine at 400F oven for almost 30 minutes. You can also bake it at 425F for 20-25 minute

What Other variations for Bake Brie Buff Pastry?

For this recipe pictured here, I’ve used raspberry preserve, my other recommendations are peach and apricot, they pair very well with brie and almonds as well.
If a sweet wheel is not your thing, try a savory twist. Caramelized onions, jalapeño slices, may be garlic and sun dried tomatoes, who knows, this might be your thing. This is a very basic recipe for a baked brie with puff pastry, do not stop here and let your imagination go wild with all the possible flavors you can add.

Instructions

  • Place the Brie in the freezer while you take out the puff pastry to thaw, takes about 30 minutes.*

  • Preheat oven to 400 degree F. line a baking sheet with parchment paper.

  • Roll the puff pastry out using a rolling pin.

  • Slice the Brie in half place one half on the center of the puff pastry. Spread the raspberry preserve on top.

  • Top with chopped pecans then place the other half on top. Fold the pastry around to completely cover the cheese brushing between folds with egg wash.

  • Place the brie on the prepared baking sheet and bake in the center of your oven.

  • Bake for 30 minutes or until the buff is golden brown.

  • Let it cool down for 10-15 minutes before serving.
